Spicy Mississippi Pot Roast Ramen. . .

Image
We had a delectable Mississippi Pot Roast last night, we like to shred it and throw it on some bread (shout out to Randall's asiago cheese bread rolls) some provolone cheese, hit it with the vrouler and "BAM" magical sammich.  But that's not what we are talking about.  Dinner tonight was "get what you want" and I decided to create a little cross cultural cuisine concoction!  Grabbed some spicy beef ramen, boiled up a jammy egg (7 minutes and then right into an ice water bath is perfect) some green onions.  Oh, don't forget the cheese.  I've taken to two slices in the bowl before pouring in the ramen and broth.  One slice American and one slice Munster.  And that's it.  Also, that silver thing in the back is a batch off beef broth getting simmered down now. . .

Yo Dawg, I Heard You Like Chicken Parm. . .

Image
So I made a chicken Parm sammich out of chicken Parm meatloaf!!  Often talked about, and finally executed on; about six months ago,  The Wife made a chicken with garlic sauce meatloaf, and it was a hit with everyone.  And I thought to myself, this would be amazing on a good roll with marinara and some mozzarella and Parmesan cheese.  It turns out, I was right!   So we got fresh asiago cheese sandwich rolls, picked up some marinara sauce by Rana, and some mozzarella and provolone cheese and got busy.  Diced up the meatloaf and threw it in a stainless steel skillet with some olive oil to add a bit of crunch.  Toasted the rolls, laid down a bed of shredded cheeses to let the meatloaf cubes stay in place, splashed on the marinara and blankets it with cheese, a quick pass through the broiler to get the top cheese all melty and viola, chicken Parm sammich with chicken garlic meatloaf.   Served with some extr...

You Put What In Where?!?! Deviled Egg Macaroni Salad!

Image
The Wife is a really amazing cook.  She has thrown together some absolutely exquisite meals and I am always happy to taste test and offer suggestions for changes.  I believe we tried three or four different macaroni salad recipes before hitting this one and once we tried this one, we never looked for another recipe.  We've played with this one a bit and Mike and Dane have asked for the recipe.  Directly from the Wife - I only use vinegar, no lemon juice, and I add white pepper to taste ( a healthy punch or so). Also tell him to make it the night before or at least 6 hours before so it can sit https://barefeetinthekitchen.com/deviled-egg-pasta-salad/#wprm-recipe-container-36536 Also, tell him to add some fried bacon bits!  . . . Always add the bacon. I would also say The Wife had put a little cayenne pepper once and I enjoyed it.

Blueberry Lemon Yogurt Loaf

Image
I didn't use a loaf pan, get over it.  I also didn't use vanilla Greek yogurt. . . Big whup.  I was sent a video by a coworker (Shout out to Meghan)who throws food videos at me like a brand new private throws $20's at Jade, down at the Rusty Nickel. I "followed" this recipe; https://realfoodwholelife.com/recipes/lemon-blueberry-loaf/#recipe With the exception of using a Meyer Lemon flavored Greek yogurt, and using an 11" cake pan.  Super tasty, light, not too sweet and not very tart, it's the perfect combination of flavors. i only used about 1/2 my blueberries, next time I'll use maybe 3/4 of the batch.  But we were very happy with how it came out! Now I need to know how many batches to make A 1/4 sheet pan worth?!  Happy Eating!!

Carnitas Burritos

Image
So no shit, there we were.  Talking about food; I know, huge surprise, and Carnitas was brought up.  But what about carnitas Burritos, we asked?! So a plan was set and Carnitas Burritos happened on a nice Sunday afternoon. Amidst a canning extravaganza where we made canned nectarine preserves, spiced nectarines preserves, watermelon lemonade concentrate and a first run attempt at watermelon jelly.  A busy day to be sure but a fun day in the kitchen for The Wife and I.  A couple hours in the Dutch oven. . . Shredded and a little bit of time under the broiler. . .  And a loaded burrito happened with home made charro beans, Mexican rice, sour cream, quac, salsa and some shredded cheese The charro beans deserve a post all by their lonesome, and the next time we make them, they'll get it.  But from one lucky individual who received some carnitas and charro beans, they had this to say. . .  Enjoy & Happy Ea...

What Are You Doing With Your Sweet Potato?

Image
We've all been to the Texas Roadhouse and had the sweet potato side with the honey cinnamon butter.  It is a joy to eat.  We've all had holiday yams, very tasty.  But, have you ever topped your sweet potato with the savory toppings generally reserved for the much revered Baked Potato?!  I'm talking butter, sour cream, shredded cheese, fresh made bacon bits, and chopped green onion?  No, you say?  That seems a little weird?  Well I'm here to tell you. It's freaking amazing!! I too, was an unbeliever.  But The Wife convinced me to try it.  And mind blown, soooooo tasty.  Prick the potato with a fork multiple times, rub it with olive oil and sprinkle some coarse ground salt on it.  Bake until done (go look it up) crack that puppy open and ladel on the toppings.  All that savory is a great counter point to the sweetness and here's a fact I didn't know.  You can eat the skin of a sweet potato.  I was told as a ...

The Wife's Birthday Dinner!

Image
The Wife's birthday was on the 1st.  So she decided she was going to grill some steaks.  She started out seasoning them and putting them on a rack in the fridge, FRIDAY NIGHT!! Monday morning she threw together a bowl of potatoes salad and as we got closer to dinner we I wrapped some asparagus in bacon and seasoned it with garlic powder and a little smoked paprika. The most amusing part was that the asparagus took longer to cook than anything else, but the entire meal was delicious!
