What Are You Doing With Your Sweet Potato?
We've all been to the Texas Roadhouse and had the sweet potato side with the honey cinnamon butter. It is a joy to eat. We've all had holiday yams, very tasty. But, have you ever topped your sweet potato with the savory toppings generally reserved for the much revered Baked Potato?! I'm talking butter, sour cream, shredded cheese, fresh made bacon bits, and chopped green onion? No, you say? That seems a little weird? Well I'm here to tell you.
It's freaking amazing!! I too, was an unbeliever. But The Wife convinced me to try it. And mind blown, soooooo tasty. Prick the potato with a fork multiple times, rub it with olive oil and sprinkle some coarse ground salt on it. Bake until done (go look it up) crack that puppy open and ladel on the toppings. All that savory is a great counter point to the sweetness and here's a fact I didn't know. You can eat the skin of a sweet potato. I was told as a kid you couldn't. Regular white potato, yep. Sweet Potato, nope. There you go. Try that out. Happy Eating!
