Blueberry Lemon Yogurt Loaf

I didn't use a loaf pan, get over it.  I also didn't use vanilla Greek yogurt. . . Big whup.  I was sent a video by a coworker (Shout out to Meghan)who throws food videos at me like a brand new private throws $20's at Jade, down at the Rusty Nickel. I "followed" this recipe; https://realfoodwholelife.com/recipes/lemon-blueberry-loaf/#recipe With the exception of using a Meyer Lemon flavored Greek yogurt, and using an 11" cake pan.  Super tasty, light, not too sweet and not very tart, it's the perfect combination of flavors. i only used about 1/2 my blueberries, next time I'll use maybe 3/4 of the batch.  But we were very happy with how it came out! Now I need to know how many batches to make A 1/4 sheet pan worth?!  Happy Eating!!

Carnitas Burritos

So no shit, there we were.  Talking about food; I know, huge surprise, and Carnitas was brought up.  But what about carnitas Burritos, we asked?! So a plan was set and Carnitas Burritos happened on a nice Sunday afternoon. Amidst a canning extravaganza where we made canned nectarine preserves, spiced nectarines preserves, watermelon lemonade concentrate and a first run attempt at watermelon jelly.  A busy day to be sure but a fun day in the kitchen for The Wife and I.  A couple hours in the Dutch oven. . . Shredded and a little bit of time under the broiler. . .  And a loaded burrito happened with home made charro beans, Mexican rice, sour cream, quac, salsa and some shredded cheese The charro beans deserve a post all by their lonesome, and the next time we make them, they'll get it.  But from one lucky individual who received some carnitas and charro beans, they had this to say. . .  Enjoy & Happy Ea...
