Yo Dawg, I Heard You Like Chicken Parm. . .

So I made a chicken Parm sammich out of chicken Parm meatloaf!!  Often talked about, and finally executed on; about six months ago,  The Wife made a chicken with garlic sauce meatloaf, and it was a hit with everyone.  And I thought to myself, this would be amazing on a good roll with marinara and some mozzarella and Parmesan cheese.  It turns out, I was right!   So we got fresh asiago cheese sandwich rolls, picked up some marinara sauce by Rana, and some mozzarella and provolone cheese and got busy.  Diced up the meatloaf and threw it in a stainless steel skillet with some olive oil to add a bit of crunch.  Toasted the rolls, laid down a bed of shredded cheeses to let the meatloaf cubes stay in place, splashed on the marinara and blankets it with cheese, a quick pass through the broiler to get the top cheese all melty and viola, chicken Parm sammich with chicken garlic meatloaf.   Served with some extr...

You Put What In Where?!?! Deviled Egg Macaroni Salad!

The Wife is a really amazing cook.  She has thrown together some absolutely exquisite meals and I am always happy to taste test and offer suggestions for changes.  I believe we tried three or four different macaroni salad recipes before hitting this one and once we tried this one, we never looked for another recipe.  We've played with this one a bit and Mike and Dane have asked for the recipe.  Directly from the Wife - I only use vinegar, no lemon juice, and I add white pepper to taste ( a healthy punch or so). Always add the bacon. I would also say The Wife had put a little cayenne pepper once and I enjoyed it.
